The Brewmaster's Table: Discovering the Pleasures of Real Beer with Real Food

The Brewmaster's Table: Discovering the Pleasures of Real Beer with Real Food

Traditional craft-brewed beer can transform a meal from everyday to extraordinary. It's an affordable, accessible luxury. Yet most people are only familiar with the mass-market variety. Have you tasted the real thing?

In The Brewmaster's Table, Garrett Oliver, America's foremost authority on beer and brewmaster of the acclaimed Brooklyn Brewery, reveals why real beer is the perfect partner to any dining experience. He explains how beer is made, relays its fascinating history, and, accompanied by Denny Tillman's exquisite photographs, conducts an insider's tour through the amazing range of flavors displayed by distinct styles of beer from around the world. Most important, he shows how real beer, which is far more versatile than wine, intensifies flavors when it's appropriately paired with foods, creating brilliant matches most people have never imagined: a brightly citric Belgian wheat beer with a goat cheese salad, a sharply aromatic pale ale to complement spicy tacos, an earthy German bock beer to match a porcini risotto, even a fruity framboise to accompany a slice of chocolate truffle cake. Whether you're a beer aficionado, a passionate cook, or just someone who loves a great dinner, this book will indeed be a revelation.

Tasting Beer: An Insider's Guide to the World's Greatest Drink

Tasting Beer: An Insider's Guide to the World's Greatest Drink

Beer. It's the most popular drink in the world. Enjoyed at ballparks, in home-away-from-home pubs, on the family room sofa, and in every kind of restaurant, beer is at ease in any setting. For all beer lovers who have known the pleasure of draining a pint, Randy Mosher explores and explains the complete tasting experience as it applies to all the wonderful brews of the world.

Beer may be the common beverage of the people, but it is far from simple. With 10,000 years of history, more than 900 identified flavors, dozens of styles, and thousands of breweries around the world, beer is as complex as its grape-based neighbors in the liquor stores. It is an artistic creation, brewed from dozens of possible ingredients and processed in hundreds of different ways. Mosher guides readers to a better understanding of how every batch of beer is affected by each of the brewmaster's choices — recipe formulation, brewhouse procedures, yeasts, fermentations, carbonation, filtration, packaging, and much more.

Beer can be light, dark, mild, strong, flat, or fizzy. Hundreds of tastes can be detected in beer, from resin to toast, and from apple to smoke. Readers will learn how to identify the scents, colors, flavors, and mouth-feel of all the major beer styles. There are also chapters on proper serving and storage conditions, and classic beer and food pairings.

The second half of the book is a style-by-style compendium of the different brews within major beer families, including American craft brews, British lagers, German ales, and Belgian Dubbels. For each style there are historical and regional facts, taste and aroma characteristics, seasonal availability, food pairings, and a few terrific recommendations for readers to sample.

Beer : The Art of Making Man Fuel

Beer : The Art of Making Man Fuel

In tough economic times, we all look for ways to save money. With gas prices going up constantly, the prices of
everything just goes right on up with them. Unlike the government, we can't print up money so anything we can do
to cut costs without giving up quality of life is a good move. And if quality of life includes having a nice tasting brew
every so often, well then there is definitely something we can do and maybe you are already starting to do that is not
only great fun but a very good cost cutting move for you.
The great thing about taking up home brewing that you get three great benefits all in one great hobby. First you get
a new passion in your life that will keep you busy and learning a side of beer making that you never knew could be so
fascinating. Second, you inherit an entire society of fascinating people who are zealots for this hobby and life style
of home brewing. And finally, once you get set up with the equipment and learn the "ropes" of brewing your own
beer at home, you can make beer that is 100 times better than anything you can get at the liquor store or in a
restaurant. But you can make it for a tiny percentage of what you would pay for retail beer which is inferior to yours
anyway. ...Read more

Beer-Can Chicken: And 74 Other Offbeat Recipes for the Grill

Steven Raichlen's Beer-Can Chicken tells everything one should ever need to know about roasting a chicken upright on top of a can of beer. For those who find that premise strange or silly (Raichlen, in fact, thanks his publisher for being "wacky enough" to produce the book), the author describes beer-can chicken as "the perfect bird, crackly crisp, succulent within ... the most flavorful chicken you've ever tasted."

Raichlen's goal is to encourage grillers to have fun and use their imagination, and he presents 74 "offbeat recipes" as starting points. Notable selections include Beer-Can Turkey, which requires a giant 32-ounce can of Foster's to do the job; Welder's Chicken, a stewing hen wrapped in aluminum foil and turned with welder's gloves; Dirty Steaks, cooked right on the coals; and Diabolical Chicken, soaked with spicy French mustard and which Raichlen makes "whenever I'm short on time or fancy ingredients but want to impress the hell out of my guests." There are also recipes for "beerless birds" (Ginger Ale Chicken, Black Cherry Soda Chicken), side dishes, and desserts, as well as info on grilling techniques and equipment.

A chicken straddling a beer can, at the very least, makes a great conversation piece at an outdoor beer bash. Raichlen's most helpful hint? Make sure the beer can is open before putting it on the grill. --Andy Boynton ...Read more
